Song Dynasty: Villagers produce 35% faster. Unlocks Zhuge Nu crossbowmen. Also, if the village is upgraded, the maximum population is increased by 40.
Yuan Dynasty: Villagers, Imperial Officials, and military units are +15% faster. Also unlocks Granary and Fire Lancer cavalry unit. The Granary collects taxes and increases the yield of nearby farms by 15%.
